I don't know what to call this phenomenon, but it happens to me regularly with my GH5. I get out of sync when I press the record button so that I end up recording the time in between shots and not the shots themselves. So I'm hitting record, thinking that I'm going to record a new clip, but actually the camera is already running so I actually stop it. Then at the end of the clip I think I'm shooting I hit record again, to stop the recording, but I actually start shooting a new clip. I usually do this for 2 or 3 clips before I notice, and I end up with lots of behind the scenes footage 🤣
I think part of the problem is that I use slower cards on the GH5, which needs a few seconds after recording to buffer the clip. During this period the record button is inactive and I slip out of sequence.
I'm quite aware of my tendency to do this and try to watch out for it, but it still happens regularly enough to be slightly embarrassing! Particularly if I'm doing a job for someone else and handing over the footage at the end of the day.

This could very well be a case of irrational exuberance. Take a look at the camera. We know that Panasonic required a vent on the back of their S1H to do 6k. Look at most cinema cameras that do 6k or 8k. Fans are usually a must unless you have an exceptional heat sink and w/o an EVF. Add an EVF to a camera and you have lots of heat. Try doing 8k for any extended length and you'll have a shitload more of heat. Canon's 1DX Mark III is capable of up to 2,600 Mbs but has a body the size of a 1969 Buick and no EVF. How is Canon dissipating heat on this smaller camera with 8k capability?
I see forums littered with phrases like "Canon take my money!" Really? Not only have we not seen the full specs. No one has been able to test the camera.
    Something seems fishy to me.

Personally I love using m43 cams with native lenses for interviews. You can easily light for f/2.8, but with the benefit of f/5.6 DoF.  It means I can use smaller, less powerful lights which helps keep the setup small.

The S1 to the GH4 is too big of a jump IMO. Panasonic has tweaked their color science substantially since 2014 and pairing the two would be more of a headache than it's worth. The G85 will get you much closer, but really I would try to spring for a GH5. The 10 bit will be a huge help for you. If that's too much, then consider a used original Blackmagic Pocket. HD only, but it's great HD.
Remember, when matching cameras you often have to match the best image to the inferior one. Don't cripple your S1 - get something that can almost replicate it. Just my $0.02.

Potato Jet has access to all that gear through a variety of ways. He is an active video producer so he has access to rentals and other equipment used for that. He has many filmmaker friends that loan him stuff. He has many sponsors that send him items for review. And he is has a healthy case of G.A.S as well that leads to many of his own purchases.
If you watch enough of his videos, he eventually tells you how/why he has basically every piece of kit. Sometimes he'll reference a RED he rented or borrowed for a video from months prior, for example.
TBH Potato Jet is my favorite Youtuber right now. He feels very genuine and I legitimately like watching his stuff.

Spotted this last night on Curb Your Enthusiasm. A GH5s being used as a prop deposition camera. It’s in a cage which makes me think this is an actual production tool. Maybe a crash cam or second unit. Pretty cool.

I used my P4K and OG Pocket together over the weekend. I used the Super Scale feature in Resolve to bring the OG's footage up to 4K. It's not quite as detailed, but can easily intercut with true 4K stuff in the eyes of the client. Very happy with the results.

Doh, dunno how that happened lol
I don't think they have released a follow up to the DVX200 yet because the market it appeals to (ENG) moves a lot slower. A lot of local network affiliates are using the same cameras they got when they changed over to HD. They ride their equipment until the wheels fall off. The DVX200 also still exceeds the needs of a lot of ENG shooters, so it's not really out of date.
The local CBS affiliate bought DVX200's and my buddy Michael loves it.

This is exactly why I think Panasonic with stay with MFT at least through the GH6. They have a massive group of users that want a full featured video camera for ~$2000. MFT lets them do that. It's impossible in FF at least in 2020.
