I would be surprised if exposing over 75 IRE would lead to clipping.

With Sony SLOG 2 it is often recommended to expose skin tones at 70IRE.

Yeah V-Log is a good 15, 20 points lower on skin tones than Slog 2.

In my experience try not to squash your mids in waveform GH5 dont worry much about the highlights  it handles well in vlog_L 10bit that is 

In short answer expose halve of stop to the right
