It's ridiculous because it's precisely the concept: the log is no contrast because you want to settle it in post production.
If you don't want to work in post production you have to find the Picture Profile closest to the log but more contrasted like the Ciné D II or Flat or ....

AF settings are set to default on both setups and WB is set to 5600K on both the whole time.
The same LUT is applied over both clips with the only a few minor exposure tweaks to get them closer in color.
The S5II was shot in VLOG and the a7SIII was shot in S-LOG3.Cine"

EDIT – we reached out to Panasonic to clarify the base ISO’s of the GH6 with or without DR boost mode:
DR Boost “ON”: V-Log / HLG: ISO2000
DR Boost “ON”: other picture profiles: ISO800
DR Boost “OFF”: V-Log / HLG ISO250 (initially we thought 800).
DR Boost “OFF”: other picture profiles: ISO100
