I once worked in a very big cinema, it had black seats, black walls and a black velvet mask around the screen. It also had a steep, amphitheater-like audtitorium. When the lights went down, it was almost like 'I count to ten, you open your eyes and you are in ... '- wherever the film took you. I'd leave the main forum black on white. Why? I'm not sure why.
