NX1 is the most flexible in this regard from everything i tried, you can even set M mode but ISO set to Auto. I've been always frustrated why Sony, Panasonic, Olympus, etc locks this valuable feature....

@MountneerMan last weekend I was shooting outside. At times it would be cloudy and other times the sun would show it's face. I was trying to lock my iso, shutter speed etc. when it was cloudy so that the sun doesn't affect my image.  I was shooting in manual mode but couldn't lock my settings using the AEL button. I even changed it in Key Mapping option. After messing with the camera after my shoot, I've discovered you can lock exposure in Aperture Priority but you cannot changed the shutter speed. On a slightly different note, I've found that exposing correctly on the NX1 is all down to looking at the colors on the onboard OLED. Even one stop over exposed, and the colors will look washed out. One step under, and they look muddy. It's surprising how quick colors shift around on that OLED, it really shows what's going on once you acclimate to it. Don't worry about the low end, the screen seems to certainly crush the blacks and not show the shadows, but when the files hit the computer, the information is there. I'd say there's a stop of light on the low end that you don't see, maybe even a stop and a half depending on your picture profile and pedestal setting.
